HARVEST: Manual in 15 kg crates

ALCOHOL CONTENT: 14% Vol.

VINIFICATION: The grapes are destemmed. Maceration and fermentation occur at controlled temperatures for 8 days in vertical tanks. The wine is then racked and aged in steel tanks. In January, the wine is passed over the Amarone pomace for 4 days, then racked and transferred to French oak tonneaux where it matures for fourteen months. Our Ripasso is then bottled, where it refines for 8 months before sale.

CHARACTERISTICS: Intense red color. The nose immediately perceives warmth from the olfactory power given by the refermentation with Amarone skins, with sensations of ripe red fruit, sweet cherry, coffee, cocoa, and vanilla. On the palate, it fully expresses its power with very soft and balanced tannins, giving the sensation of "a silk dress tailored for the palate." Our Ripasso is a full-bodied wine with incredible persistence and length, making it a powerful and highly enjoyable drink, always leaving the mouth clean and ready for another sip.

PAIRINGS: Excellent wine with boiled meats, rabbit, simple red meats, and cheeses.

SERVING TEMPERATURE: 16-18° C.
