酒評:明亮、強烈的黃色,帶有金色的光芒。 細膩而復雜,帶有白花、橙花的香氣。 帶有淡淡的木香和清新的柑橘皮味。 口感圓潤,集中度高。 餘韻悠長。
配搭: 生蠔、帶子及烤魚。亦適合配搭白肉如雞肉或火雞,以及奶油芝士和清淡蔬菜菜式。
WINEMAKING/MATURING
Running of the vineyard: Agriculture raisonnée(Sustainable Agriculture. Care of soil by ploughing. Pruning «
Guillot double » method. Clearing of buds and bad branches, crown desuckering. Removal of unwanted
leaves by hand at the berry setting. Yield: 40hl/hectare. Harvested at just ripeness, the grapes are then sorted
upon reception before being put into stainless steel vats and kept at low temperature for 24 to 36 hours.
Alcoholic fermentation takes place in stainless steel vats at a controlled temperature, some (20%) using
carefully selected French oak staves. At the end of fermentation, the wines are then aged on lees with regular
concreting for four months. Before bottling, the wines are fined with bentonite then lightly filtered.
TASTING NOTESColour: bright, intense yellow with golden glow. Nose: fine and complex, on white flowers, orange blossom notes and scents ofwhite flesh fruits. Coated with subtle wood notes and freshness of citrus zest. Mouth: smooth, round and a nice concentration. Thefinale is long, supple and supported by greedy ripe fruits and freshness.
Food Pairing; Oysters, scallops, and grilled fish. It also complements white meats like chicken or turkey, as well as creamy cheeses and light vegetable dishes.
