Clos de Gat 位於猶太山脈的山麓,與以色列聖經中的阿亞隆山谷接壤。 該地區起伏的山丘和山谷一直都用於種植葡萄。 石灰岩基岩上的薄層表土與獨特的微氣候相結合,令種植的葡萄品質卓越。

 

釀酒特色

 

葡萄園中心的房子旁邊有一座古老的「Gat」(希伯來語,意思是壓榨酒的機器),Gat 的歷史比羅馬時期早了一千年。Clos de Gat的葡萄藤被修剪至每公頃約5000公斤; 以調低產量確保葡萄始終如一的高品質。並以葡萄園內的天然酵母進行發酵過程,因此所釀的酒具更多複雜性和獨特性。另外,酒莊亦設資購入兩個優質法國橡木桶務求所出產的葡萄酒都能達到最佳口感。

 


STORY

Clos de Gat is situated in the foothills of the Judean Mountains, bordering Israel’s biblical Ayalon Valley, where Joshua defeated the Five Kings. An ancient “Gat” (Hebrew for wine press), pre-dating the Roman period by a thousand years, is located by the house set in the heart of the vineyards

The Estate

The region’s rolling hills and valleys have supported grapevine cultivation for thousands of years. The combination of a thin layer of topsoil atop a bed-rock of limestone, together with a unique micro-climate, make it possible to grow grapes of outstanding quality.

 

The Terroir

Clos de Gat relies on the vineyard’s natural yeasts for the fermentation process, the wines thus gain greater complexity and fully complete the expression and uniqueness of Clos de Gat’s “Terroir”.

WINE MAKING

The region’s rolling hills and valleys have supported grapevine cultivation for thousands of years. The combination of thin topsoil on a bedrock of limestone, together with a unique micro-climate make it possible to grow grapes of outstanding quality.

After months of painstaking analysis of diverse plots of land, Eyal planted a selection of noble grape varieties: Cabernet Sauvignon, Merlot, Petit Verdot, Syrah and Chardonnay, with small, experimental amounts of Sauvignon Blanc and Viognier.

After all factors, however small, of soils, sub-soils, elevations and micro-climates had been taken into account, each plot was planted with the variety most likely to produce the highest level of fruit quality.

Fortunately, and, in part, due to the scientific studies undertaken – and no small measure of pure intuition – Eyal’s plot choices for the different grape varieties proved accurate, as subsequent vintages have consistently shown.The vines are trimmed to approximately 5000 kg per hectare; the low yield helps ensure the consistently high quality of the grapes.

 

Clos de Gat relies on the vineyards` natural yeasts for the fermentation process, the wines thus gain greater complexity and fully complete the expression and uniqueness of the “Terroir” of Clos de Gat.

Barrels

Clos de Gat imports fine French oak barrels from two prestigious tonnelleries . 


紅酒

紅酒採用開放式和封閉式不銹鋼溫控發酵槽釀造。 經過桶陳釀後,葡萄酒被轉移到沉澱池中數週,然後未經過濾裝瓶。

Red Wines

The red wines are made using both open and closed stainless steel, temperature controlled fermentation tanks. After barrel ageing the wines are transferred to settling tanks for several weeks prior to being bottled unfiltered.

白葡萄酒

夏多內葡萄汁經過壓榨後,被轉移到法國橡木桶中進行酒精和蘋果酸乳酸發酵。 然後,葡萄酒在酒糟上陳釀十二個月。

White Wines

The juice of the Chardonnay grapes, after pressing, is transferred into French oak barrels for alcoholic and malolactic fermentation. The wine is then aged on its lees for twelve months.
